Fresh Berry Jelly

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • 250 ml sugar
  • 375 ml water
  • 250 g strawberries
  • 250 g raspberries
  • 60 ml gelatin
  • 45 ml hot water

Recipe

  • 1 heat sugar and water in a saucepan until all the sugar has dissolved.
  • 2 bring the mixture to the boil.
  • 3 as it boils, remove it from the heat and allow to cool.
  • 4 hull and halve the strawberries,but leave raspberries whole.
  • 5 dissolve gelatin in hot water and stir into sugar syrup with all the berries.
  • 6 pour into a mould and set overnight in the fridge.
  • 7 serve with whipped cream and a sprig of fresh mint.
