Festive Chocolate Mousse

Ingredients

  • Servings: 6
  • 180 g chocolate (see note)
  • 30 g butter
  • 2 tablespoons brandy (optional)
  • 4 eggs, seperated
  • 300 ml cream, whipped

Recipe

  • 1 melt chocolate with butter.
  • 2 add brandy and egg yolks, mix well and cool slightly.
  • 3 fold chocolate mixture into whipped cream.
  • 4 beat egg whites til soft peaks form.
  • 5 fold lightly into chocolate mixture until well combined.
  • 6 spoon into serving dishes.
  • 7 chill until set.
  • 8 note: or dark chocolate may be used. make a 1/2 quantity with chocolate and another 1/2 quantity with dark chocolate, stir them together for marbled effect.
