English Steamed Lemon Pudding

Ingredients

- 4 tablespoons butter
- 4 tablespoons sugar
- 3 eggs, well beaten
- 1 cup sifted all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon double-acting baking powder
- 1 grated lemon, juice and rind of
- 4 tablespoons apricot preserves
- 2 tablespoons water
Recipe
- 1 beat together the butter and sugar until light and creamy. beat in eggs 1 at a time.
- 2 fold in flour, salt, baking powder, lemon rind and juice.
- 3 place in a buttered 4 cup bowl. cover the bowl with aluminum foil.
- 4 place bowl in a steamer. steam the pudding over boiling water on top of the stove for 1 1/4 hours.
- 5 heat preserves with the water.
- 6 unmold the pudding. pour apricot sauce over the pudding and serve hot. 6 servings.
