English Steamed Lemon Pudding

Ingredients

  • Servings: 6
  • 4 tablespoons butter
  • 4 tablespoons sugar
  • 3 eggs, well beaten
  • 1 cup sifted all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon double-acting baking powder
  • 1 grated lemon, juice and rind of
  • 4 tablespoons apricot preserves
  • 2 tablespoons water

Recipe

  • 1 beat together the butter and sugar until light and creamy. beat in eggs 1 at a time.
  • 2 fold in flour, salt, baking powder, lemon rind and juice.
  • 3 place in a buttered 4 cup bowl. cover the bowl with aluminum foil.
  • 4 place bowl in a steamer. steam the pudding over boiling water on top of the stove for 1 1/4 hours.
  • 5 heat preserves with the water.
  • 6 unmold the pudding. pour apricot sauce over the pudding and serve hot. 6 servings.
