Eggnog-cherry Bread Pudding

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • 2 cups heavy whipping cream
  • 1/2 cup sugar
  • 1 1/2 cups chocolate chips
  • 1/4 cup bourbon
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon gr. nutmeg
  • 6 large egg yolks
  • 6 cups bread cubes (1 inch )
  • 1/2 cup cherries, pitted and halved
  • 1/4 cup almonds

Recipe

  • 1 in a medium saucepan, combine cream, sugar, chocolate chips, bourbon, cinnamon, cloves, and nutmeg. cook over medium high heat, whisking constantly until mixture begins to boil. remove from heat.
  • 2 in a medium bowl, whisk egg yolks until smooth. using a ladle,add half of hot cream mixture in slow steady stream to yolks, whisking constantly. add remaining half of hot cream mixture whisking to combine.
  • 3 place bread cubes in a large bowl, pour egg mixture over bread cubes. add cherries, stirring to combine.
  • 4 preheat oven to 375.
  • 5 generously grease 6 (4 ounce) ramekins.spoon bread mixture into ramekins. sprinkle tops with almonds.
  • 6 place remekins in a 13 x 9 baking dish. place in oven and carefully fill baking dish with enough water to come halfway up sides of tamekins.
  • 7 bake for 25 minute until set, remove from ovenand let cool for 15min. remove remekines from water. invert onto plates.
