Old Fashioned Barley Pudding

Ingredients
- Servings: 6
- 2/3 cup pearl barley
- 3 cups boiling water
- 1 teaspoon salt
- 1 1/3 cups milk
- 1/8 teaspoon salt
- 1/4 cup brown sugar
- 1 tablespoon butter or 1 tablespoon margarine
- 1 teaspoon vanilla
- 2 eggs, lightly beaten
- 1/2 teaspoon grated lemon rind
- 1 teaspoon lemon juice
- 1/3 cup raisins
Recipe
- 1 boil water and add barley and salt.
- 2 cook slowly for 45 minutes or until barley is tender.
- 3 cool.
- 4 combine milk, salt, sugar, butter, vanilla and eggs and beat well.
- 5 then add cooked barley, raisins, lemon rind and juice.
- 6 turn into a well-greased 1 ½ quart baking pan.
- 7 set pan into a larger baking pan in oven.
- 8 pour hot water into the larger pan to within an inch of the top of the custard.
- 9 bake at 325 degrees, for about 1 hour until a knife inserted in the center comes out clean.
- 10 serve hot or cold.
