Homemade Mint Marshmallows

Total Time: 30 mins Preparation Time: 30 mins

Ingredients

  • 2 (15 ml) envelopes plain gelatin
  • 1/4 cup boiling water
  • 1/4 cup cold water
  • 1 cup sugar
  • 1/2 cup boiling water
  • 1 cup corn syrup
  • 1/4 teaspoon peppermint extract

Recipe

  • 1 in mixer bowl, dissolve gelatin in cold water.
  • 2 add 1/4 c boiling water.
  • 3 in sauce pan combine sugar, 1/2 cup boiling water till dissolved.
  • 4 add corn syrup.
  • 5 pour into gelatin, and cool when cold add flavor and beat with whip till stiff peaks form.
  • 6 scrape into a powder sugar dusted 9x13 pan.
  • 7 spread powdered sugar on top and spread to all corners and edges.
  • 8 let dry then cover.
  • 9 cut into 1" pieces and store in airtight container.
  • 10 use in place of regular marshmallows.
