Plum Duff

Total Time: 1 hr 45 mins Preparation Time: 15 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 6
  • 2 tablespoons butter, no substitutions
  • 2 tablespoons granulated sugar
  • 1 egg, well beaten
  • 1/2 cup molasses (either regular or light molasses is fine)
  • 1 1/2 cups flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup water, boiling
  • 1/2 cup raisins
  • 1/2 cup currants

Recipe

  • 1 sift the dry ingredients together.
  • 2 cream butter and sugar until fluffy; add egg and mix thoroughly.
  • 3 add molasses.
  • 4 add sifted dry ingredients alternatively to the batter with the boiling water.
  • 5 add raisins and currants.
  • 6 mix well; pour into a well-greased pudding mold and steam for 90 minutes.
  • 7 serve with any desired pudding sauce.
