Knobby Rhubarb Cake

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 1 cup sugar
  • 1/4 cup melted margarine (i use butter or vegetable oil)
  • 1 egg
  • 3 cups diced rhubarb
  • 1/2 cup chopped walnuts
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Recipe

  • 1 cream sugar, margarine, egg and vanilla.
  • 2 sift flour to spices; add to creamed mixture. stir in rhubarb and nuts.
  • 3 turn in to a greased and floured 8-inch square pan.
  • 4 bake at 350°f for 45 minutes or until done.
