Menorah Apple Pudding

Total Time: 1 hr 5 mins Preparation Time: 25 mins Cook Time: 40 mins

Ingredients

  • Servings: 10
  • 900 g cooking apples
  • 50 g sugar
  • 1 tablespoon apricot jam
  • 1 tablespoon lemon juice
  • 3 tablespoons orange juice
  • 200 g soy margarine
  • 200 g caster sugar
  • 225 g ground almonds
  • 4 eggs
  • 1 lemon, zest of, grated

Recipe

  • 1 peel, core and dice the apples. put them in a microwave proof bowl with the 50g sugar, jam, lemon juice and orange juice. cook on full power for 7 minutes.
  • 2 put the cooked apple into the bottom of an oven dish.
  • 3 beat the margarine, caster sugar, ground almonds, eggs and lemon zest together until smooth. spread over the apple.
  • 4 bake for 40 minutes on 350°f/180°c until golden brown,.
