Menorah Apple Pudding

Ingredients

- 900 g cooking apples
- 50 g sugar
- 1 tablespoon apricot jam
- 1 tablespoon lemon juice
- 3 tablespoons orange juice
- 200 g soy margarine
- 200 g caster sugar
- 225 g ground almonds
- 4 eggs
- 1 lemon, zest of, grated
Recipe
- 1 peel, core and dice the apples. put them in a microwave proof bowl with the 50g sugar, jam, lemon juice and orange juice. cook on full power for 7 minutes.
- 2 put the cooked apple into the bottom of an oven dish.
- 3 beat the margarine, caster sugar, ground almonds, eggs and lemon zest together until smooth. spread over the apple.
- 4 bake for 40 minutes on 350°f/180°c until golden brown,.
