Mandarin Orange Cake

Total Time: 2 hrs 20 mins Preparation Time: 20 mins Cook Time: 2 hrs

Ingredients

  • Servings: 16
  • 1 (18 1/2 ounce) package yellow cake mix, without pudding.
  • 1 (11 ounce) can mandarin oranges, undrained
  • 4 eggs
  • 1/2 cup vegetable oil
  • 1 (15 ounce) can crushed pineapple, undrained
  • 1 (8 ounce) container whipped topping
  • 1 (3 3/4 ounce) box instant vanilla pudding (have used sf with good results)

Recipe

  • 1 combine cake mix, oranges, eggs& oil.
  • 2 beat for 2 minutes at high speed.
  • 3 beat at low speed for one minute more.
  • 4 pour into 13 x 9 ungreased pan.
  • 5 bake at 350 degrees for 28-30 minutes.
  • 6 for frosting: combine pineapple and pudding mix, beat for 2 minutes.
  • 7 let stand for 5 minutes.
  • 8 fold in whipped topping.
  • 9 frost cake and chill at least 2 hours.
