Chocolate Pudding Pops

Ingredients
- 2 1/2 cups reduced-fat milk
- 1/2 cup sugar
- 1/2 cup unsweetened cocoa
- 1 tablespoon cornstarch
- 1 dash salt
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 2 ounces bittersweet chocolate, finely chopped
Recipe
- 1 combine the first 6 ingredients in a medium saucepan over medium high heat, stirring with a whisk.
- 2 cook for 8 minutes or until thick and bubbly, stirring constantly.
- 3 remove pan from heat.
- 4 add vanilla extract, and cocoa, stirring until smooth.
- 5 transfer the mixture to a bowl, and place the bowl in an ice-filled bowl.
- 6 cover surface of pudding directly with plastic wrap, and cool completely.
- 7 spoon chocolate mixture evenly into 6 (4 ounce) icepop molds.
- 8 top with lids, and insert craft sticks.
- 9 freeze 4 hours or until thoroughly frozen.
