Creamy Blueberry Bread Pudding

Ingredients

  • Servings: 12
  • 1 loaf rhodes frozen bread dough, baked following instructions
  • 3 eggs
  • 3 cups whipping cream
  • 1 1/2 cups sugar
  • 3 teaspoons vanilla
  • 2 cups blueberries
  • 0.5 (10 -12 ounce) package chocolate chips
  • 1/2 cup whipping cream
  • 0.5 (10 -12 ounce) package chocolate chips

Recipe

  • 1 cut cooled bread into 1-inch cubes. in a large bowl beat eggs.
  • 2 add cream, sugar, vanilla and blend.
  • 3 fold in blueberries and baking chips.
  • 4 add mixture to bread cubes and fold until cubes are evenly coated.
  • 5 pour into a sprayed 9x13-inch baking pan.
  • 6 let sit 15-30 minutes while bread soaks up mixture.
  • 7 bake at 350°f 50-60 minutes (cover with foil last 15 minutes if necessary to prevent over browning).
  • 8 let stand for 5 minutes before serving. top with sauce to serve.
  • 9 to make sauce, heat whipping cream until just starting to boil and pour over chips. stir until smooth and all chips are melted. serve over warm pudding.
