Low Carb Sugar Free Mocha Mousse

Total Time: 2 hrs 20 mins Preparation Time: 20 mins Cook Time: 2 hrs

Ingredients

  • Servings: 8
  • 6 egg yolks
  • 3/4 cup splenda sugar substitute
  • 1 1/2 cups strong brewed coffee
  • 2 (1/4 ounce) envelopes gelatin
  • 1 1/2 pints heavy cream

Recipe

  • 1 combine egg yolks, splenda and coffee in top of double boiler.
  • 2 cook until thickened to consistancy of a soft custard, remove from heat.
  • 3 soften gelatin in 1/2 cup water, stir and add to coffee mixture.
  • 4 stir and cool.
  • 5 whip the cream and fold in gently.
  • 6 pour into individual serving cups and chill.
