Logan's Award-winning Creme Brulee

Ingredients
- Servings: 8
- 10 egg yolks
- 2 1/4 cups heavy cream
- 3/4 cup milk
- 1 pinch salt
- 1/2 cup sugar
- 2 whole vanilla beans
- 1/2 cup sugar, for topping
Recipe
- 1 split and scrape vanilla beans.
- 2 dump cream, milk, sugar, salt, vanilla beans, and insides into a medium saucepan.
- 3 cook over medium heat, whisking occasionally, for 10-15 minutes.
- 4 set aside to cool.
- 5 beat yolks until light.
- 6 temper cream into egg yolks till approximately half of the cream is in the yolks.
- 7 mix together.
- 8 ladle into 4-6 oz ramekins.
- 9 place in deep baking dish with water to level of custard.
- 10 bake at 300 for 1 hour or until set.
- 11 cool and brulee.
