Eggless Egg Free Tapioca Pudding

Ingredients
- Servings: 6
- 3 tablespoons minute tapioca, dry
- 2 3/4 cups milk, 1%
- 1/3 cup sugar
- 2 tablespoons cornstarch
- 2 tablespoons water
- 1 teaspoon pure vanilla extract
Recipe
- 1 combine tapioca, milk & sugar in a medium/large saucepan and let sit for 5 minutes.
- 2 combine cornstarch & water in a small bowl.
- 3 bring to a slow boil over medium high heat, stirring constantly.
- 4 once bubbling, add cornstarch mixture and continue boiling for 1 minute.
- 5 remove from heat and add vanilla.
- 6 stir & allow to cool.
- 7 makes 6 1/2 cup servings.
