Logan's Award-winning Creme Brulee

Total Time: 1 hr 25 mins Preparation Time: 25 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 10 egg yolks
  • 2 1/4 cups heavy cream
  • 3/4 cup milk
  • 1 pinch salt
  • 1/2 cup sugar
  • 2 whole vanilla beans
  • 1/2 cup sugar, for topping

Recipe

  • 1 split and scrape vanilla beans.
  • 2 dump cream, milk, sugar, salt, vanilla beans, and insides into a medium saucepan.
  • 3 cook over medium heat, whisking occasionally, for 10-15 minutes.
  • 4 set aside to cool.
  • 5 beat yolks until light.
  • 6 temper cream into egg yolks till approximately half of the cream is in the yolks.
  • 7 mix together.
  • 8 ladle into 4-6 oz ramekins.
  • 9 place in deep baking dish with water to level of custard.
  • 10 bake at 300 for 1 hour or until set.
  • 11 cool and brulee.
