Low-cal, Bottle Gourd Squash Pudding( Doodhi Kheer)

Ingredients
- Servings: 4
- 1 cup gourd (peel the zucchini first) or 1 cup zucchini, grated (peel the zucchini first)
- 2 1/2 cups 2% low-fat milk
- 2 tablespoons nonfat dry milk powder
- 3 tablespoons sugar or 3 tablespoons splenda sugar substitute
- 1/4 teaspoon ghee
- 1/2 teaspoon cardamom powder
Recipe
- 1 mix the dry milk in 1 cup water and make a smooth paste.
- 2 heat the ghee.
- 3 add the squash and lightly saute.
- 4 add the milk, milk powder mix and the sugar. simmer on medium heat till squash is cooked.
- 5 add the cardamom powder.
- 6 serve warm or chilled.
