Dietetic Diabetic Pineapple Pudding

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 1 (19 ounce) can crushed pineapple in juice
  • 1 1/2 cups soymilk
  • 2 tablespoons minute tapioca
  • 2 teaspoons vanilla extract
  • 1/2 cup berries (to garnish) (optional)

Recipe

  • 1 mix the pineapple, with its juice, the soymilk and the tapioca in a medium sized pot.
  • 2 heat over medium heat, stirring frequently.
  • 3 once it begins to simmer, turn it down and continue stirring, until thickened, about 10 minutes. there should not be any specks left in the tapioca.
  • 4 remove from the heat and stir in the vanilla.
  • 5 divide amongst small serving dishes and garnish with a few berries if desired; blueberries, strawberries or raspberries would all be good.
