Eggless Egg Free Tapioca Pudding

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 3 tablespoons minute tapioca, dry
  • 2 3/4 cups milk, 1%
  • 1/3 cup sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 teaspoon pure vanilla extract

Recipe

  • 1 combine tapioca, milk & sugar in a medium/large saucepan and let sit for 5 minutes.
  • 2 combine cornstarch & water in a small bowl.
  • 3 bring to a slow boil over medium high heat, stirring constantly.
  • 4 once bubbling, add cornstarch mixture and continue boiling for 1 minute.
  • 5 remove from heat and add vanilla.
  • 6 stir & allow to cool.
  • 7 makes 6 1/2 cup servings.
