Chocolate Pudding Pops

Total Time: 4 hrs 15 mins Preparation Time: 15 mins Cook Time: 4 hrs

Ingredients

  • 2 1/2 cups reduced-fat milk
  • 1/2 cup sugar
  • 1/2 cup unsweetened cocoa
  • 1 tablespoon cornstarch
  • 1 dash salt
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 ounces bittersweet chocolate, finely chopped

Recipe

  • 1 combine the first 6 ingredients in a medium saucepan over medium high heat, stirring with a whisk.
  • 2 cook for 8 minutes or until thick and bubbly, stirring constantly.
  • 3 remove pan from heat.
  • 4 add vanilla extract, and cocoa, stirring until smooth.
  • 5 transfer the mixture to a bowl, and place the bowl in an ice-filled bowl.
  • 6 cover surface of pudding directly with plastic wrap, and cool completely.
  • 7 spoon chocolate mixture evenly into 6 (4 ounce) icepop molds.
  • 8 top with lids, and insert craft sticks.
  • 9 freeze 4 hours or until thoroughly frozen.
