Khir (himalayan Rice Pudding

Total Time: 40 mins Preparation Time: 5 mins Cook Time: 35 mins

Ingredients

  • Servings: 10
  • 1/2 gallon whole milk
  • 1 cup cream
  • 1/4 cup butter
  • 1/2 cup basmati rice
  • 1/2 cup sugar
  • 3 -5 cardamom pods, finely chopped
  • 1/8 cup shredded coconut
  • 1/8 cup golden raisin
  • 1/4 cup toasted cashews

Recipe

  • 1 in a large pot, heat butter over low heat. add rice and stir for 2-3 minutes.
  • 2 pour milk into the rice mixture. add cream and sugar; stir thoroughly. bring to a boil; reduce heat and allow to simmer over low heat, stirring frequently, for about 20 minutes, or until the rice has softened.
  • 3 add cardamom, coconut, raisins, and cashews; stir well. cook for additional 15 minutes, or until the rice is cooked soft and the mixture has thickened to consistency of your liking.
  • 4 chill the pudding overnight in refrigerator. garnish with handful of toasted cashews.
