Coconut-raisin Pudding

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 3 cups shredded fresh coconut
  • 1 cup granulated sugar
  • 2 cups milk
  • 1 dash salt
  • 3 eggs, beaten
  • 1/2 cup raisins
  • 3 tablespoons rum

Recipe

  • 1 heat coconut, sugar, milk and salt to boiling in 3-quart saucepan over medium heat, stirring frequently.
  • 2 stir at least half of the hot mixture gradually into eggs.
  • 3 blend into hot mixture in saucepan.
  • 4 cook over low heat, stirring constantly, until mixture is thickened, 5 to 8 minutes.
  • 5 remove from heat; stir in raisins and rum.
  • 6 serve warm or cold.
