Molly's Cracker Pudding

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 5
  • 1 quart milk (recipe suggests whole milk)
  • 1 cup coconut
  • 1 cup saltine crackers, finely crushed
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 eggs, separated

Recipe

  • 1 mix all ingredients except eggs.
  • 2 bring to a boil, stirring often.
  • 3 beat 2 egg yolks.
  • 4 slowly stir in the yolks to the other ingredients.
  • 5 cook on medium to medium-high for 30 minutes, or until thickened, stirring often (mine only took about 20 minutes).
  • 6 pour into a glass baking dish (i use a round one).
  • 7 beat the 2 egg whites until they peak.
  • 8 with a spoon, add dollops of the egg whites over the top of the pudding.
  • 9 the egg whites should not be spread, just dropped by the spoonfuls around the top of pudding.
  • 10 broil until egg whites are browned.
  • 11 refrigerate until fully chilled.
