Limoncello Bread Pudding

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 3/4 cup heavy cream
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup limoncello (can substitute with 1/4 cup lemon juice and 1/4 cup sugar, heated until sugar is melted)
  • 7 large eggs
  • 1/2 cup granulated sugar
  • 2 quarts stale bread
  • 1/4 cup limoncello
  • 1/4 cup sugar

Recipe

  • 1 cube bread and place in a 9x9x2 baking dish.
  • 2 in a mixing bowl, wisk together the heavy cream, milk, eggs, sugar, vanilla extract, and limoncello. pour over bread.
  • 3 cover with foil and bake at 350 for 40-50 minutes, or until pudding is set.
  • 4 in a small sauce pan, bring linomcello and sugar to a boil stirring well to dissolve sugar. pour over pudding.
  • 5 top with one scoop of vanilla ice-cream and fresh mint leaf.
