Limoncello Bread Pudding

Ingredients

- 3/4 cup heavy cream
- 3/4 cup milk
- 1 teaspoon vanilla extract
- 1/4 cup limoncello (can substitute with 1/4 cup lemon juice and 1/4 cup sugar, heated until sugar is melted)
- 7 large eggs
- 1/2 cup granulated sugar
- 2 quarts stale bread
- 1/4 cup limoncello
- 1/4 cup sugar
Recipe
- 1 cube bread and place in a 9x9x2 baking dish.
- 2 in a mixing bowl, wisk together the heavy cream, milk, eggs, sugar, vanilla extract, and limoncello. pour over bread.
- 3 cover with foil and bake at 350 for 40-50 minutes, or until pudding is set.
- 4 in a small sauce pan, bring linomcello and sugar to a boil stirring well to dissolve sugar. pour over pudding.
- 5 top with one scoop of vanilla ice-cream and fresh mint leaf.
